The pork cutlet was excellent and very easy. Just salt and pepper lean pork cutlets and lightly coat them in flour. Heat some olive oil over medium-high heat in a non-stick skillet. Toss in a small handful of chopped fresh rosemary and add the cutlets. Cook on each side 5-6 minutes or until meat reaches 160 degrees. (Or whatever your desired level of doneness is.) Remove meat from skillet and set aside. Deglaze the pan with 1/2 cup red wine, stirring until reduced by half. Serve sauce over sliced meat. I finished it off with a little fleur de sel. Nom!

Notes: 26/44 points. No banked points used. WAY under today. Thing is that with all the raw fruits and veggies, combined with yogurt and a pita that was supplemented with fiber, I was pretty full throughout the day. I did drink plenty of water.

Wow, what a nice day of eating! I am such a poor eater…everything I eat seems to be loaded with carbs…except for veggies, I do love veggies!
It was a good day! I’m really trying to clean up my diet.
Congratulations on such a good day. Do you usually eat snacks? I find they’re really important if I’m working on my diet. String cheese and fresh veggies are my favorite quick snack.
I love the meat recipe. I’m going to try it soon. I have some killer salad recipes I’ll share if you like.
By the way, it was really sweet the way you defused the tension between Laura and Diane in the group email.
Mothers and daughters! It’s a tough one. Until I got to this point, I never realized how hard it is on the mothers! Daughters don’t know that.
You’re a very nice person, Andrea. i’m glad you’re my friend. ,
Thank you!
I usually do eat snacks… the 2nd was just a bit of a crazy day. I do keep string cheese in the fridge at the office for snacks! It is nice for a little bite or two. I also keep nut mixes in my desk. A small handful often really hits the spot.
Oh, you must try the pork recipe! The fresh rosemary really made the dish.
I’m glad you’re my friend too… see you at knitting group this morning!
