My weekdays tend to be a little unpredictable so I try to take the time to experiment in the kitchen on the weekends.
Two weekends ago, it was African Chicken in Peanut Sauce, a recipe I found on CookEatShare. SO good! I would up shredding the chicken and mixing it all up with the couscous I served on the side. It was even better the next day. If you enjoy things like Thai peanut sauce, you’ll probably really enjoy this. Don’t skimp on the fresh ginger. For me, it really made the dish. It added a bright note that kept the dish from being heavy.
The Boss Man, who generally meets my attempts to ‘broaden his horizons’ with suspicion, really liked this when I offered to share my lunch the next day. I brought plenty and he had two bowls.

And dessert? Sour Cream Ice Cream with fresh strawberries. Nom! (I’m really enjoying my new ice cream maker…)

Once again… I bombed out on a project. Project 365 just didn’t work out. I had a stretch of a few weeks when I just couldn’t get it done. Kind of a bummer but I do have some good news to balance it out.
With regards to my Resolutions, I am 100% on the wagon! Cable is still off. No new yarn purchases. I haven’t had soda pop or fast food at all in 2010. The soda thing was the worst. I do allow myself the occasional plain seltzer or seltzer with fruit juice, which is refreshing. I still crave Diet Coke though. 46 days later, I still think about it several times a day. I’m tempted to do some research to see if there is anything beyond the caffeine that is addictive.
I’m gradually cleaning up my pantry and improving how I eat. Tonight, I decided to make a broccoli salad, based from a recipe I saw on mattbites.com. I altered it a bit, based on what I had on hand. My version was raw broccoli, mayo, raw organic apple cider vinegar, golden raisins, sunflower seeds, shallots and a bit of cheese leftover from something else. I didn’t really measure anything… just mixed it together in what I thought would be good amounts. Had it with a chik’n gruyere Quorn cutlet for a very nice vegetarian dinner.

One other positive thing to report: since I officially stopped dieting, the food issues have become less stressful. I am not eating anything diety. My goal is to eat as many things as possible as close to how nature provides them. The above salad was made with real mayo and I find that I am satisfied with much less. Granted, I don’t want to overdo it… but highly processed low-fat chemical spread is no substitute for real food.
